The wash is distilled twice in a pot still (some distilleries prefer a triple distillation – it is the exception which makes the rule). After the first distillation in the wash still, low wine around 25° runs out of the still, over 70° result from the second distillation in the spirit still. Before being filled into casks, the spirit is diluted with water to around 63°. Every distillery has its individually shaped stills, which again is one of the many reasons for the individuality of every single malt whisky.
