The green grain is now crushed in a malt mill. Mixed with water in
a mash tun, the starch which developped through malting, converts
into sugars. The liquid now is called “wort”. Every distillery has
another recipe: some need 3 passes, other 4 at individual temperatures
from 60°C to over 90°C to wash out the sugars.
