Barley is soaked in water until it sprouts. The process is stopped by drying the barley over a kiln. The kiln is heated with gas, and commonly with more or less peat. The proportion of peat used has a direct impact on the character of the distilled product: earthy, smoky tones derive their benefit from this historic fuel.
